The essential accessories for your wood-fired oven
🔥 Handling: Peels
The peel is the iconic accessory. There are several types:
✅ The wooden peel: ideal for loading pizzas and bread into the oven, it is used to move raw pizzas and bread dough pieces easily and without sticking from the work surface to the oven's baking floor. Most often made of beech, the pizza and bread peel comes in different shapes, and several lengths of aluminium handle are available to suit your needs.
✅ The stainless steel peel: heat-resistant, it stands out for its lightness and manoeuvrability. It lets you handle, turn and remove your hot pizzas and baked bread from the oven. In 25, 30 and 36 cm diameters, the round peel will suit all your preparations (small and large pizzas, individual loaves, etc.). It also comes in a square shape for family-sized pizzas or tartes flambées, and a rectangular shape for baguettes, etc.
A wood-fired oven is a living ecosystem. You need to manage the embers and keep the cooking floor (the hearth) clean.
✅ The ember rake: ideal for moving ash and coals to the sides or back of the oven depending on the cooking cycle, the ember rake keeps your oven in perfect condition after every use.
✅ The ash brush: With its brass bristles, the wood-fired oven brush is used to clean ash off the hearth before placing food directly on the stone. For post-cooking cleaning, its sturdy, heat-resistant brass bristles remove the last particles of ash from hard-to-reach areas.
✅ The ash bucket: useful for storing your ash and moving it easily.
Because "it's hot" is not a precise measurement, especially when you know that a pizza is cooked at around 400°C whereas bread needs around 240°C. Several types of thermometer exist:
✅ The capillary thermometer: the most accurate, as it is built into the structure of your oven during construction; it measures the temperature "at the heart" of the firebox, deep inside the oven, thanks to its one-metre-long probe.
✅ The stem or cannula thermometer: : Often built into the oven door, the cannula thermometer measures the air temperature inside the cooking chamber.
✅ The free-standing thermometer: suited to domestic use, you simply place it on the hearth once the flames have died down to measure the temperature inside.
✅ The laser (infrared) thermometer: Essential for measuring the precise temperature of the cooking floor.
